I love this recipe, not only because it’s my grandmother’s, but because it doesn’t have any artificial ingredients (do you know what’s in your store-bought brand?) It tastes wonderful and the color is amazing! When my mom gave us some I kept asking her “Are you sure you didn’t add any food coloring to it??”
Great for little thank-you gifts too. I gave some to my neighbor for watching my dog while I was on vacation (not to mention a check for her daughter who did all the work!)
Now that strawberries are back in season, and on sale at many grocers, it’s a great time to spend about 30 minutes making some jelly/jam (what’s the difference, anyone know??)
Here’s what you’ll need:
- 2 cups smashed, cut up strawberries (approx. 1 lb.)
- 4 cups sugar
- 3/4 cup water
- 1 box sure-jell
- 5 - 8 oz. freezer safe cups (found in the canning section near sure-jell)
Clean, chop, and smash the strawberries. Mix the strawberries and sugar together. Set aside for 10 minutes. In a saucepan mix together the sure-jell and water, bring to a rolling boil over high heat, and stir constantly for 1 minute. Pour the sure-jell mixture into the fruit and stir constantly for 3 minutes. Immediately fill the containers to within 1/2″ of the top and put on the lids. Let stand at room temperature for 24 hours. Put them in the freezer. Take them out to thaw (as needed) in the fridge and keep refrigerated after opening.
You may only need 4 of these cups but better to be safe than sorry! I also tried using the larger size 16 oz cups and they work well too. Enjoy!
