Raspberry Streusel Bars - High Fiber Recipe

This is a healthy recipe for  snack bars that are very tasty! Kids love them!

Here’s what you’ll need:

  • 1 cup All Bran cereal, finely chopped
  • 3/4 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 3/4 cup firmly packed brown sugar
  • 1 tbsp confectioners sugar (optional)
  • 1/2 cup raspberry preserves
  • 1/4 tsp cinnamon
  • 1/4 cup butter
  • 1/4 cup water
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Heat oven to 350 degrees.  In a medium-sized mixing bowl, combine the chopped cereal, both flours, brown sugar, baking soda, cinnamon, and salt.  Using a pastry blender or two table knives, cut in butter until mixture resembles course crumbs.    Stir in water; mixture will be crumbly.  Set aside one cup of the mixture.  Grease the bottom of a 9 x 9 x 2 inch baking dish and press the remaining mixture into the bottom of it with the back of a spoon.

Over the cereal mixture, evenly spread the raspberry preserves.  Sprinkle the reserved cereal  mixture over top.  Bake for 25 minutes or until lightly browned.  Cool.  Dust lightly with the confectioners sugar.

Yeild: 25 bars, 2 x 1.25 inches.  90 calories and 2 grams of fiber per bar.
