Monster Mash (an Avocado blend)

This recipe is a yummy avocado blend that will surprise the pickiest of eaters. My kids are the hardest to get to eat veggies, at least during those toddler to young-child years. This recipe is one that my husband and I call a “sweet treat” to entice them to eat it! It’s very tasty and they’ll never know what you put in it to make it look soooo cool! This “side-dish” for lack of a better term, is very tasty and stores well in the fridge even though it has avocado in it.

Here’s what you’ll need:
1 avocado, peeled with pit removed
1 cup almonds, soaked in water for at least four hours
1 cup or so of water (separate from that needed with the almonds)
1/2 - 1 cup of dates

In a food processor or blender combine the avocado, almonds (make sure you drain off the water), and dates. Before turning the food processor on add a little water and blend. Keep adding water until it reaches the consistency you like. You may not need the whole cup above because it depends on the size of your avocado. You don’t want it runny and you do want it to be thick enough that it will stick to your spoon (kind of thick and gloppy). Sorry for the horrible description but I think you can get the idea! We serve it as a dessert at dinner or as a snack. Give it a try! I think you and your family will be pleasantly surprised!
