Growing up, my sister and I called these Knox Blox. They’re made from Knox gelatin which is good for a lot of health reasons (hair, nails, etc.). We love to use the ABC cookie cutters to make words. This is a big hit at their birthday parties when we spell out “Happy Birthday Sawyer” (or whoever). The birthday guests have never (usually) seen Knox Blox so it’s a real treat!  They’re so yummy and the kids have a blast with them!

What you’ll need:

  • 4 envelopes of unflavored knox gelatin
  • 3 small boxes of regular jell-o, flavor of your choice (does not work well with sugar-free jell-o for some reason)
  • 4 cups boiling water

Mix the dry powders of all the knox and jell-o packets together in a large bowl. Make sure they’re blended well before pouring the water in. Once the water is boiling, add it in slowly while stirring (if you can manage to do that!) and keep stirring until the gelatin has dissolved completely. Pour it into a 9 X 13 pan (glass and metal are fine) and refrigerate until firm (about 3 hours or so). Cut them into squares or let the kids use cookie cutters. You’ll get more out of it if you cut squares.
