This is a very easy recipe to make blueberry muffins. It doesn’t have many ingredients and all you have to do is just mix them up with no prep work!
Here is what you will need:
- 3 cups fresh blueberries (frozen or any other fruit can be substituted)
- 1 cup oatmeal
- 1 cup orange juice
- 3 cups all purpose flour
- 4 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup sugar
- 1/4 cup applesauce
- 1 cup canola oil
- 2 eggs
Heat oven to 400 degrees. Grease muffin tins or put muffin papers in them. In a large bowl mix all the ingredients together until blended. Do not over-stir or the muffins will turn out dry. Fill muffin cups about 2/3 full. As an option, you can sprinkle the top with sugar or a sugar/cinnamon mixture. Bake for 15 minutes.
Sugar/Cinnamon Mixture: combine 1/2 cup sugar and 1 tsp cinnamon
